Is there a way to opt-out of/disable the "trending now" on the search bar?
If I really want to look up celebrities and mass shootings I'll do that on my own terms.
Otherwise I don't want to see it when I'm doing work.

Try this. If it doesn't work, reverse the change to allow News to run in the background.
Windows 10 > Start > Settings > Privacy > (on the left) Background apps > Microsoft news > turn off.

My feelings exactly. Either Microsoft provides an option to disable or I switch search engines and/or web browsers.

Where is that menu? I do not have it anywhere that I can find. Running Win 10.
Disregard question, I just found it. You have to right click the task bar first to bring up the menu.

Yes, right click on the task bar brings that menu
Unchecking "Open on hover" will keep the icon in the search box but it wont open the big search highlights window unless you click. if you totally want to switch off that icon the search box feature then uncheck the "Show search highlights" option too that will remove the icon from the search box.
(Edit: This is for Windows 10)

My choices are a little different than yours for some reason. My screenshot shows what I have. When I click on the Bing Search oval the "Trending Now" dropdown still appears. That is what I was hoping to eliminate.
