Recovery.

I was wondering, since I sold my old xbox, if I buy a new one, and sign in to my account, will I still have all of my content? I realize I will not have like my offline gameplay saves, but will I still have my online levels on the games I have played? I had my friend check my stats by looking in his friends list, and the stats are the same, as expected. But, when I purchase my new Xbox 360 console, and I sign in, all I should have to do is download my downloadable content, such as map packs, and I should be set, correct?

That's correct. You'll have to recover your account when you get the new console.
