You can't restore programs or settings using Windows.old.  All you can really do is recover your data.  The programs and updates all have to be installed fresh.  Here's the procedure on how to recover information from
Windows.old: http://support.microsoft.com/kb/932912 and what it covers is just about all you can recover.

You can't.
You can retrieve data from Windows.old, but not programs. You have
to reinstall programs from their original media.
