How can I set my computer for single spacing, and how can I set the cursor anywhere on the page that it is needed?

Right click in a document and select Paragraph and in the Paragraph dialog that opens, set the Spacing Before and After and the Line Spacing to the desired values (probably 0, 0 and Single)  Then click on Set as Default and then on OK.

While I would not recommend it, for your second question, click on File and then on Options and then on Advanced and in the Editing options section of the dialog, check the box for "Enable click and type".

For the second part of your question, why do you want to click and type? If you are trying to set up a form, you can do that by using tables (add or remove cell borders as appropriate). Please elaborate.
