Default Headers Changed: How Do I Get Back An Old Header Theme?

When I updated to Windows 8.1 from windows 7 and installed Office 2013 again I noticed that in Word 2013 the headers had changed to different themes.  I was wondering how I get back to using an old theme?  Can I download the old ones to use again.  I really only need one but I don't know how to tell what the name of that old one was.  I just always picked it out of the options under insert, headers.

The first header is what Word 2010 calls "Alphabet." The choices you are showing in your second screenshot are the choices offered in my Word 2013. Are you sure you did not change from Word 2010 to Word 2013 when you did your upgrade?

In any case, you can add another header example to the headers gallery by selecting the text you want there and saving it to that gallery. Insert (tab) > Quick Parts > AutoText > Save Selection to AutoText Gallery

Then change the Gallery to Headers
