Upon converting a 2007 document to 2010 all of the text boxes have at the end what looks like an upside down T. I can't delete it like a normal character, and deleting and reinserting a new text box does not solve the problem. How do I get rid of this

That suggests you're using formfields inside a Word table whose cells have the 'fit text' option applied. Using content controls instead of formfields, or not using the 'fit text' option, will resolve the problem.
